Description

Hearty, comforting, and oh-so-easy to make, Poor Man’s Husband Casserole is the ultimate budget-friendly meal. Packed with tender beef, flavorful veggies, creamy mashed potatoes, and melted cheese, it’s a dish your family will ask for again and again. Perfect for weeknights or a make-ahead meal!

Ingredients

Scale
  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 medium carrots, thinly sliced
  • 1 celery stalk, diced
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 3 cups mashed potatoes (homemade or store-bought)
  • 1 1/2 cups shredded cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef over medium heat until fully cooked. Drain any excess grease and set aside.
  3. In the same skillet, sauté the onion, carrots, celery, and garlic until softened (about 5 minutes). Add the ground beef back to the skillet and stir in the tomato sauce, Worcestershire sauce, thyme, salt, and pepper. Let the mixture simmer for 5-7 minutes.
  4. Spread the beef mixture evenly into a baking dish.
  5. Layer the mashed potatoes over the beef mixture, spreading evenly to create a smooth surface.
  6. Sprinkle shredded cheddar cheese over the mashed potatoes.
  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and golden brown.
  8. Remove from the oven and let rest for 5 minutes before serving.

Notes

    • For added flavor, sprinkle Parmesan cheese on top of the cheddar.
  • Leftovers can be stored in an airtight container in the refrigerator for 3-4 days. Freeze for up to 3 months for longer storage.
  • To reheat, bake covered at 350°F (175°C) until heated through, or microwave individual portions on high for 1-2 minutes.
