  • 1 cup white chocolate chips
  • ½ cup sweetened condensed milk
  • ¾ cup granulated sugar
  • ¼ cup unsweetened cocoa powder
  • 2 ½ teaspoons gelatin powder
  • ¼ cup cold water (for blooming gelatin)
  • ½ cup warm water
  • 1 teaspoon vanilla extract (optional)
  • Red gel food coloring (as needed)

Instructions

  1. In a small bowl, bloom the gelatin by sprinkling it over ¼ cup cold water. Let it sit for about 5 minutes.
  2. In a saucepan over medium heat, combine condensed milk, sugar, warm water, and cocoa powder. Stir until sugar dissolves and mixture is smooth (do not boil).
  3. Remove from heat and add white chocolate, stirring until fully melted.
  4. Stir in the bloomed gelatin until completely dissolved.
  5. Add red gel food coloring until you achieve the desired color. Strain the glaze through a fine-mesh sieve for a smooth finish.
  6. Let the glaze cool to 90°F (32°C) before using. If it’s too hot, it will be too runny; if too cold, it will be too thick.
  7. Place your chilled cake or dessert on a wire rack over a baking tray. Slowly pour the glaze over the center, letting it flow evenly down the sides.
  8. Allow the glaze to set for 5-10 minutes, then carefully transfer the cake to a serving plate.

Notes

  • For a shinier glaze, avoid over-stirring to prevent air bubbles.
  • If the glaze thickens too much, reheat gently and stir until smooth.
  • The glaze can be stored in the fridge for up to 1 week or frozen for 1 month. Reheat before use.
