Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream the butter and sugar together until light and fluffy (about 2-3 minutes).
- Add the egg, lemon juice, lemon zest, and vanilla extract to the butter mixture. Mix until fully incorporated.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
- Scoop tablespoon-sized portions of the dough and roll them into balls. Coat each ball generously in powdered sugar.
- Arrange the dough balls on the prepared baking sheets, spacing them about 2 inches apart.
