Ingredients

  • 1 box lemon cake mix (15.25 oz)
  • 8 oz cream cheese (softened)
  • 1/2 cup unsalted butter (softened)
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/2 cups sweetened shredded coconut
  • Powdered sugar (optional, for rolling)

Instructions

  • Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  • Beat cream cheese and butter until smooth. Add egg and vanilla, mixing until combined.
  • Gradually mix in the lemon cake mix until a thick dough forms.
  • Fold in shredded coconut.
  • Scoop and roll dough into balls. Optional: Roll in powdered sugar.
  • Bake for 10-12 minutes. Let cool before enjoying.
