Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large bowl, beat together the peanut butter, softened butter, brown sugar, and granulated sugar until creamy.
  3. Add the egg and vanilla extract, mixing until smooth.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  5. Fold in the white chocolate chips and chopped peanuts until evenly distributed.
  6. Scoop 2-tablespoon portions of dough, roll into balls, and place them on the prepared baking sheet, leaving 2 inches of space between each one.
