Ingredients

  • 1 packet active dry yeast (2 ¼ tsp)
  • 1 ¼ cups warm water
  • 2 tbsp sugar
  • 1 tsp salt
  • ½ cup baking soda (for the water bath)
  • 4 tbsp unsalted butter (melted)
  • 1 tsp garlic powder
  • ½ cup grated Parmesan cheese

Instructions

  1. Prepare the Dough: In a large bowl, mix warm water and sugar. Sprinkle yeast over the top and let sit for 5 minutes, until foamy. Add flour and salt, then mix until a dough forms. Knead for 5 minutes on a floured surface until smooth and elastic. Place in a greased bowl, cover, and let rise for 1 hour.
  2. Preheat Oven: Preheat the oven to 425°F (220°C). Line two baking sheets with parchment paper.
  3. Boil Water Bath: Bring a large pot of water to a boil. Slowly stir in the baking soda.
  4. Shape Pretzel Bites: Divide dough into 4 portions. Roll each into a rope about 1 inch thick, then cut into bite-sized pieces.
  5. Boil Pretzel Bites: Drop pieces into the baking soda water in batches, boiling for 20-30 seconds. Remove with a slotted spoon and place on prepared baking sheets.
  6. Bake: Brush the bites with melted butter and sprinkle with a little salt. Bake for 12-15 minutes, until golden brown.
  7. Coat with Garlic Butter: Mix melted butter with garlic powder. Toss warm pretzel bites in the butter, then sprinkle with grated Parmesan cheese. Serve immediately.
