Instructions
- Prepare the Dough: In a large bowl, mix warm water and sugar. Sprinkle yeast over the top and let sit for 5 minutes, until foamy. Add flour and salt, then mix until a dough forms. Knead for 5 minutes on a floured surface until smooth and elastic. Place in a greased bowl, cover, and let rise for 1 hour.
- Preheat Oven: Preheat the oven to 425°F (220°C). Line two baking sheets with parchment paper.
- Boil Water Bath: Bring a large pot of water to a boil. Slowly stir in the baking soda.
- Shape Pretzel Bites: Divide dough into 4 portions. Roll each into a rope about 1 inch thick, then cut into bite-sized pieces.
- Boil Pretzel Bites: Drop pieces into the baking soda water in batches, boiling for 20-30 seconds. Remove with a slotted spoon and place on prepared baking sheets.
