  • 4 cups powdered sugar
  • 23 tbsp heavy cream
  • 2 tsp pure vanilla extract
  • Pink gel food coloring (to your preferred shade)
  • Assorted sprinkles for decoration

Instructions

  1. Prepare the Cake Batter:
    • Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans or line them with parchment paper.
    • In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
    • In another bowl, combine buttermilk, oil, eggs, vanilla, vinegar, and blue gel food coloring. Mix until smooth.
    • Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
  2. Bake the Cake:
    • Divide the batter evenly between the prepared pans.
    • Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
    • Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  3. Make the Frosting:
    • In a large bowl, beat softened butter until creamy and smooth. Gradually add powdered sugar, one cup at a time.
    • Add heavy cream, vanilla extract, and a few drops of pink gel food coloring. Beat until fluffy and well combined.
  4. Assemble the Cake:
    • Place one cake layer on a serving plate. Spread a thick, even layer of frosting on top.
    • Add the second cake layer and frost the top and sides of the cake.
    • Decorate with sprinkles and pipe additional frosting swirls, if desired.
