Instructions
- Prepare the Cake Batter:
- Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans or line them with parchment paper.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, combine buttermilk, oil, eggs, vanilla, vinegar, and blue gel food coloring. Mix until smooth.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
- Bake the Cake:
- Divide the batter evenly between the prepared pans.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Make the Frosting:
- In a large bowl, beat softened butter until creamy and smooth. Gradually add powdered sugar, one cup at a time.
- Add heavy cream, vanilla extract, and a few drops of pink gel food coloring. Beat until fluffy and well combined.
- Assemble the Cake:
- Place one cake layer on a serving plate. Spread a thick, even layer of frosting on top.
- Add the second cake layer and frost the top and sides of the cake.
- Decorate with sprinkles and pipe additional frosting swirls, if desired.
- Serve and Enjoy:
- Slice and serve immediately, or store leftovers in an airtight container.
Notes
