Instructions

  1. Prepare the Zucchini: Grate the zucchini and place it in a colander. Sprinkle with 1/2 teaspoon of salt and let it sit for 10-15 minutes. Squeeze out the excess liquid using a clean kitchen towel or cheesecloth.
  2. Mix the Batter: In a large bowl, combine the grated zucchini, eggs, flour, Parmesan cheese, green onions, garlic, salt, and pepper. Mix until well combined.
  3. Heat the Skillet: Heat a skillet over medium heat and add enough oil to lightly coat the bottom.
  4. Shape and Fry: Scoop about 2 tablespoons of the batter for each fritter, flattening it slightly into a patty shape. Place in the hot skillet and cook for 3-4 minutes per side, or until golden brown and crispy.
  5. Drain and Serve: Transfer the cooked fritters to a plate lined with paper towels to drain any excess oil. Serve warm with sour cream, yogurt, or your favorite dipping sauce. Garnish with fresh herbs if desired.
