Ingredients
Scale
- 1 fresh baguette, sliced into 1/2-inch rounds
- 8 oz brie cheese, sliced
- 1 cup fresh cranberries (or frozen, thawed)
- 2 tbsp balsamic vinegar
- 2 tbsp honey
- 2 tbsp olive oil
- Fresh thyme leaves for garnish
Instructions
- Preheat and Prep: Preheat the oven to 400°F (200°C). Line two baking sheets with parchment paper.
- Toast the Baguette: Brush both sides of the baguette slices with olive oil. Arrange on a baking sheet in a single layer. Bake for 8-10 minutes, flipping halfway, until golden and crisp.
- Roast the Cranberries: In a bowl, mix cranberries with balsamic vinegar and honey. Spread the mixture on the second baking sheet. Roast for 10-12 minutes, or until the cranberries are tender and slightly caramelized.
- Assemble Crostini: Place a slice of brie on each toasted baguette while warm. Top with a spoonful of roasted cranberries.
- Garnish and Serve: Sprinkle with fresh thyme leaves for garnish. Serve immediately, warm or at room temperature.
Notes
- If using frozen cranberries, extend roasting time by 2-3 minutes to ensure proper caramelization.
