- 4 cups all-purpose flour
- 2 ¼ tsp instant yeast (1 packet)
- 2 tbsp granulated sugar
- 1 tsp salt
- 4 oz cream cheese, softened
- ¾ cup warm milk (110°F)
- 4 tbsp unsalted butter, melted (plus extra for brushing)
- 1 large egg, room temperature
- 3 tbsp fresh chives, finely chopped
- Sesame seeds or everything bagel seasoning (optional)

- Activate the Yeast: In a small bowl, mix warm milk and sugar. Sprinkle yeast over the top, let it sit for 5 minutes, then stir until foamy.
- Make the Dough: In a large mixing bowl, combine flour and salt. Add the yeast mixture, softened cream cheese, melted butter, and egg. Mix and knead until a smooth dough forms.
- Add Chives: Fold in the chopped chives, ensuring even distribution.
- First Rise: Place the dough in a greased bowl, cover with a damp cloth, and let it rise for 1–1.5 hours, or until doubled in size.
- Shape the Rolls: Punch down the dough and divide into 12–16 equal portions. Roll into smooth balls and arrange in a greased baking dish.
- Second Rise: Cover and let the rolls rise again for 30–40 minutes, until puffy.
- Bake: Preheat oven to 375°F (190°C). Brush rolls with melted butter and sprinkle with sesame seeds or seasoning if desired. Bake for 18–22 minutes, until golden brown.
- Serve: Remove from the oven, brush with more butter, and let the rolls rest for 10 minutes before serving warm.
Notes
- Rolls can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 3 months.
- To reheat, sprinkle rolls with water and warm in the oven at 325°F (160°C) for 8–10 minutes.
