For the Base:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

For the Cinnamon Filling:

  • 1/2 cup packed light brown sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons unsalted butter, melted

For the Glaze:

  • 1 1/2 cups powdered sugar
  • 23 tablespoons milk (adjust for desired consistency)
  • 1/2 teaspoon vanilla extract



Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper for easy cleanup.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, followed by the vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
  5. Press two-thirds of the dough into the prepared baking dish to form an even base layer.
  6. In a small bowl, combine the brown sugar and cinnamon for the filling. Stir in the melted butter until the mixture resembles damp sand. Sprinkle this mixture evenly over the base layer of dough.
  7. Drop small spoonfuls of the remaining dough over the cinnamon sugar layer, spreading gently to create a swirled top.
  8. Bake for 25–30 minutes, or until the edges are golden and the center is set. Let cool for 15 minutes.
  9. Whisk together the powdered sugar, milk, and vanilla extract to make the glaze. Drizzle it generously over the cooled bars.
  10. Slice into squares and serve.

Notes

  • For added crunch, sprinkle chopped pecans or walnuts over the cinnamon filling before baking.
  • To store, keep in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 5 days.
  • These bars freeze beautifully! Wrap individual bars tightly in plastic wrap and store in a freezer-safe container for up to 2 months.
