Ingredients
Scale
- 1 lb ground beef
- 3 cups cooked white rice (or substitute with cooked brown rice)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 ½ cups tomato sauce
- 2 cups shredded cheddar cheese (divided)
- 1 tsp paprika
- 1 tsp dried Italian herbs
- Salt and pepper, to taste
- 2 tbsp butter
- ½ cup milk
- Fresh parsley or green onions for garnish (optional)
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with cooking spray or butter.
- Cook the Ground Beef: In a large skillet over medium heat, cook the ground beef until browned. Add the onion and garlic, sautéing until softened. Drain any excess fat.
- Season the Beef: Stir in the tomato sauce, paprika, Italian herbs, salt, and pepper. Simmer for 5 minutes to blend the flavors.
- Mix Ingredients: In a large mixing bowl, combine the cooked rice, seasoned ground beef mixture, and half the shredded cheese. Mix until evenly combined.
- Assemble the Casserole: Spread the mixture evenly in the prepared baking dish. Sprinkle the remaining cheese on top.
- Bake: Bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Garnish and Serve: Remove from the oven, let cool slightly, and garnish with fresh parsley or green onions if desired. Serve warm.
Notes
- Make Ahead: Prepare the casserole up to the baking step, cover, and refrigerate for up to 24 hours. Bake when ready to serve.
- Freezing Option: Freeze the assembled casserole (before baking) for up to 3 months. Thaw overnight in the refrigerator before baking.
- Optional Additions: Add diced bell peppers, mushrooms, or spinach for extra veggies. A sprinkle of Parmesan cheese on top pairs beautifully with the cheddar.
