- 2 large potatoes, boiled and mashed
- 1 cup shredded mozzarella cheese (or a mix of mozzarella and cheddar)
- 1/4 cup all-purpose flour
- 2 tbsp cornstarch
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder (optional)
- 2 eggs, beaten
- 1 cup breadcrumbs (panko for extra crunch)
- Oil for frying
Instructions
- Boil and mash the potatoes until smooth, ensuring no lumps remain.
- In a bowl, combine the mashed potatoes, shredded cheese, flour, cornstarch, salt, pepper, and optional garlic powder. Mix into a dough-like consistency.
- Take a small portion of the mixture, flatten it in your palm, and place a cube of mozzarella cheese in the center. Roll it into a ball, sealing the cheese completely. Repeat with the remaining mixture.
- Dip each cheese ball into the beaten egg, then roll in breadcrumbs until fully coated. For extra crispiness, repeat for a double coating.
- Heat oil in a deep pan or fryer to 350°F (175°C). Fry the Cheese Balls in batches for 2-3 minutes or until golden brown and crispy.
- Remove with a slotted spoon and drain on paper towels. Serve hot with your favorite dipping sauce.
