For the Cajun Chicken:
- 4 boneless, skinless chicken thighs
- 2 tbsp olive oil
- 2 tbsp Cajun seasoning

- 1 tsp smoked paprika
- ½ tsp black pepper
- Juice of 1 lemon
For the Alabama White Sauce:
- ½ cup mayonnaise
- 2 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 1 tbsp prepared horseradish
- 1 tsp lemon juice
- ½ tsp garlic powder
- ½ tsp black pepper
- 1 tsp sugar (optional)
Instructions
- In a bowl, mix olive oil, Cajun seasoning, garlic powder, smoked paprika, black pepper, and lemon juice. Marinate chicken for 30 minutes.
- Whisk all white sauce ingredients in a bowl. Chill until ready to serve.
- Preheat the grill to medium-high heat. Grill chicken for 6-8 minutes per side, or until internal temp reaches 165°F.
- Drizzle Alabama White Sauce over the chicken and serve.
