These Buttery Pecan Snowball Cookies are a holiday classic! Tender, buttery cookies packed with nutty pecans are rolled in powdered sugar for a melt-in-your-mouth treat.   • 1 cup (2 sticks) unsalted butter, at room temperature
  • 1/2 cup powdered sugar (plus more for coating)
  • 2 cups all-purpose flour
  • 1 cup pecans, finely chopped (toasted for extra flavor)
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the butter and 1/2 cup powdered sugar until light and fluffy, about 2-3 minutes.
  3. Add the vanilla extract and salt, then gradually mix in the flour until the dough comes together. Stir in the chopped pecans.
  4. Roll the dough into 1-inch balls and place them on the prepared baking sheets, spacing them about 1 inch apart.
  5. Bake in the preheated oven for 10-12 minutes, or until the bottoms are lightly golden while the tops remain pale.
  6. Let the cookies cool on the baking sheets for 5 minutes. While warm, roll each cookie in powdered sugar until coated. Transfer to a wire rack to cool completely.
  7. Once the cookies have cooled, roll them in powdered sugar again for a snowy finish. Serve and enjoy!
