Boat Dip (Rotel Ranch Dip) is a creamy, tangy, and flavor-packed appetizer that’s perfect for any occasion. Made with ranch seasoning, Rotel tomatoes, and a blend of cheeses, this no-cook dip is a hit at parties, picnics, and casual get-togethers. Serve it with tortilla chips or fresh veggies for a crowd-pleasing snack everyone will love!

Ingredients

Scale
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 packet ranch seasoning mix
  • 1 can (10 oz) Rotel tomatoes (drained)
  • 1 cup shredded cheddar cheese
  • 2 tbsp fresh cilantro, chopped (optional)
  • 12 tbsp chopped jalapeños (optional, for spice)
  • Tortilla chips or veggies for serving

Instructions

  1. In a large mixing bowl, combine softened cream cheese, sour cream, and ranch seasoning. Mix until smooth and creamy.
  2. Add the drained Rotel tomatoes and fold them into the creamy mixture.
  3. Stir in the shredded cheddar cheese, ensuring it’s evenly distributed.
  4. If desired, mix in chopped cilantro and jalapeños for added flavor and spice.
  5. Transfer the dip to a serving dish and garnish with extra shredded cheese, cilantro, or jalapeños if desired.
  6. Serve immediately with tortilla chips or fresh vegetables, or refrigerate for an hour to let the flavors meld.

Notes

  • Make it milder: Use mild Rotel and skip the jalapeños if you prefer a less spicy dip.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
  • Freezing: You can freeze the dip for up to 1 month, but the texture may change slightly after thawing.
  • Customization: Add crispy bacon bits, diced green onions, or chopped bell peppers for extra texture and flavor.
